Andorra - Bubble & Squeak

Trinxat - Resembles bubble & squeak and because we are useless and (in this case) pretty ignorant of the pronunciation we refer to it as Andorran Bubble & Squeak...

Yet another embarrassing claim here, we spent barely a couple hours in Andorra. We drove in to check it out while we were spending a week or so in Barcelona. It was Easter and compared to London it was hot! I remember getting out of the car at a Golden Arches restaurant wearing shorts and a T-shirt and getting the weirdest looks from people - turns out about 200m up the road there was a ski field in full swing! It wasn't until after we ate lunch and continued driving into France that we saw snow over 8ft high on the sides of the road.

The Challenge: Trinxat aka bubble & squeak - Because who doesn't love a little cooked breakfast for dinner!

Apart from being ignorant AF on pronunciation we were also pretty crap when we visited the stunning mountainous country and didn't try the local fare so have very little clue on what is considered good, traditional or otherwise, so we had a google and went with something familiar yet different and yummy sounding - Baby Leaps & I have never actually made bubble & squeak either.
