With family living in Odense & Copenhagen as well as an office (for the company I worked for) Denmark was one of those places we went to a few times but didn't experience much wholly different food to what we were used to, especially since Baby Leaps hates fish. Though, I could happily smash a couple of hotdogs by Nyhavn or some open, black-bread sandwiches.
The Challenge: Roast pork belly & parsley sauce - Because getting roast pork right is hit & miss for us.
It sounds simple enough - roast pork belly, parsley sauce and a side of potatoes - but there is more to a meal than just the ingredients. The Danes have a magical technique for pork belly that meant even we weren't able to mess it up. This is how I want all my roast pork cooked!
