A delicious honey-mustard glazed, roast port ideal for a pre-Christmas Christmas meal.

A blizzard, Icicle danger, deep snow & personal reflectors are amongst my favourite memories of Estonia. It was the first place I visited and experienced real snow - and it was Awesome! I'll admit that trudging through shin deep snow with low visibility and a roller suitcase was difficult but it really set us up for an unforgettable, snowy break in Tallinn.
The Challenge: Christmas(sy) Roast Pork - Because Baby Leaps fancied something she had seen and it was nearly Christmas so why not.
2020 was crap and with another lockdown likely Baby Leaps wanted to make Christmas not only come early but last until the New Year. And so it was that we found ourselves cooking and eating roast pork that is "often served around Christmas time". I feel like this is a pretty standard (still very yummy) meal but I also just found out that Baby Leaps did not disclose that pickled fish and blood sausage were also traditional dishes... she's so boring!
