Colcannon - Or as I now like to call it, fancy mash with greens.
The emerald isle, home to leprechauns, fairy folk, and people with one of the coolest accents I've ever heard. You have to love Ireland. We suck and have really only been to Dublin one Easter with a group of friends - though believe it or not we really only had booze at the Guinness factory and the Jameson Distillery. We were well behaved enjoying wholesome things like the leprechaun museum & Trinity college. Though we did enjoy a very confusing road trip in Co. Donegal using a Car that only had miles on the speedometer - the Republic uses kilometers like "normal" people while the north uses miles - one day I will learn to convert them in my head.
The Challenge: colcannon & soda bread - Because Irish stew is a Nah Leaps special & fancy mash with yeast-free bread sounded pretty tasty.
The thing with Irish and British food is that it doesn't seem exotic. The best meal I had in Ireland was actually in Northern Ireland and was a simple Irish breakfast with white pudding - basically black pudding but without the blood and therefore a thousand times yummier. We did a fair bit of googling to find Irish dishes but colcannon & soda bread stood out. I should also mention that alongside the Irish Stew Nah Leaps has mastered, we've also made potato pancakes aka boxty before and now it just sounds like I'm making up excuses for why we chose simple things. For what it's worth our soda bread turned out... a bit rubbish!
